NMR metabolomics in complex natural matrices derived from vegetables, animals and humans. The correlation of the metabolic profile with natural environmental factors, pollution, natural and genetically modified varieties, animal species, lifestyle and induced or inherited pathologies. New synthetic compounds with potential biological activity are being structurally characterized, and for some of them the induced macroscopic effects on plants and changes in plant metabolism are also explored.
